An important part of any adventure is keeping well fed and well hydrated. I’ve loved my role as Expedition Chef on this trip and here are a few things I learnt about cooking in the jungle:
Tinned vegetables and dried pulses are a life-saver
Be flexible – you never know when your kitchen will be turned into a beetle observation arena!
Plan ahead – before stocking up, think of the types of meals you can cook using ingredients which are versatile, nutritious and long-lasting
Don’t forget snacks – you’ll definitely need them during long, wet nights of light-trapping
Food is a great way to bring people together wherever you are – it’s possible to host a dinner party even in a log cabin in the Amazon!
Here are a few of my Jungle Kitchen creations to show what’s possible, all vegetarian and cooked from scratch:
Rice with fried plantain and chickpea stew; Mushroom carbonara; Pasta with red bean salsa; Garlic potatoes with red bean stew; Tomato risotto; Egg fried rice with spinach and chickpea salsa
